High Protein Black Bean and Sweet Potato Quesadillas

Ingredients:

For the Black Bean and Sweet Potato Filling:

  • 1 medium sweet potato, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

For the Quesadillas:

  • 4 large whole wheat or corn tortillas
  • 1 cup shredded mozzarella cheese (or cheese of your choice)
  • 1/2 cup chopped fresh cilantro
  • Optional toppings: Greek yogurt, salsa, avocado slices

Instructions:

  1. Roast the Sweet Potatoes:

    • Preheat the oven to 400°F (200°C).
    • Toss the diced sweet potatoes with olive oil, ground cumin, chili powder, salt, and pepper.
    • Spread the seasoned sweet potatoes on a baking sheet in a single layer.
    • Roast in the preheated oven for about 20-25 minutes or until the sweet potatoes are tender and slightly caramelized. Stir halfway through the cooking time.
  2. Prepare the Black Bean Filling:

    • In a bowl, combine the roasted sweet potatoes and drained black beans. Gently mix to combine, being careful not to mash the sweet potatoes.
  3. Assemble the Quesadillas:

    • Heat a non-stick skillet over medium heat.
    • Place a tortilla in the skillet and sprinkle a quarter of the shredded cheese on one half of the tortilla.
    • Spread a quarter of the black bean and sweet potato filling over the cheese.
    • Sprinkle chopped cilantro on top of the filling.
    • Fold the other half of the tortilla over the filling to create a half-moon shape.
  4. Cook the Quesadillas:

    • Cook the quesadilla in the skillet for about 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted.
    • Repeat the process for the remaining tortillas and filling.
  5. Serve:

    • Once the quesadillas are cooked, transfer them to a cutting board and let them cool slightly before slicing.
    • Serve the quesadilla slices with optional toppings such as Greek yogurt, salsa, and avocado slices.
